Norma Amaya
Norma Amaya is an accomplished Executive Chef currently leading the culinary team at the Colcord Hotel Oklahoma City, Curio Collection by Hilton. With more than a decade of experience in the hospitality industry, she has earned a reputation for creativity, precision, and leadership in some of the country’s most dynamic kitchens.
Chef Amaya began her formal training at Long Beach City College, where she earned an Associate of Arts and Sciences degree in Culinary Arts/Chef Training. Her education laid the groundwork for a career defined by innovation and dedication to excellence.
Over the years, she has held leadership positions at premier properties including The Delphi Hotel in Los Angeles, The Wayfarer DTLA, and The Belamar Hotel in Manhattan Beach, where she refined her craft and guided teams to deliver memorable dining experiences.
A strong operations professional, Chef Amaya is not only skilled in the artistry of cuisine but also in the management and strategy behind successful culinary programs. She is adept in team leadership, menu development, and the coordination of high-volume events, always balancing creativity with precision execution.
In her current role at the Colcord Hotel, Chef Amaya continues to elevate the guest experience by curating menus that combine sophistication with approachability. Her culinary vision is rooted in her passion for food and her commitment to hospitality, ensuring every dish leaves a lasting impression.

What do you attribute your success to?
I attribute my success to the guidance and inspiration of my mentor, Chef Hailey, as well as the unwavering support of my husband, kids, and grandkids. Their encouragement has pushed me to grow both personally and professionally. Beyond the kitchen, I find joy in hiking and cooking together with my family, which keeps me balanced and connected. Running my own kitchen has been one of my greatest accomplishments, allowing me to bring my passion for food and leadership to life every day.
