About Dr. Joy
Dr. Joy Jackson‑Hooper is a pediatrician and business owner whose career reflects a longstanding commitment to children, families, and healthy living. She earned a Bachelor of Science in Biology from Tougaloo College in 1979 before receiving her Doctor of Medicine degree from the University of Mississippi Medical Center in 1986. She completed her Pediatric Internship and Residency Program at the University of Mississippi Medical Center in 1989.
Dr. Jackson is currently practicing pediatrics at Jackson‑Hinds Comprehensive Health Center (JHCHC) in Jackson and Hazlehurst, Mississippi, where she has spent decades caring for children and counseling parents on dietary and nutritional matters. Her clinical journey began immediately after completing her pediatric training at the University of Mississippi Medical Center, when she joined G.A. Carmichael Health Center in Yazoo City, Mississippi. She later continued her work in community health at Delta Health Center in Greenville and Mound Bayou, Mississippi, contributing to one of the nation’s oldest and most historic community health organizations. In addition to her outpatient pediatric practice, Dr. Jackson has also served as an Emergency Room Physician at several hospitals across Mississippi, primarily in Indianola and Hazlehurst, where she provided acute care to children and families in critical settings. Across these roles, Dr. Jackson has built a career defined by service, medical expertise, and a deep commitment to improving the health and well‑being of Mississippi communities.
In 2022, Dr. Jackson expanded her professional journey beyond medicine by launching Elaine’s Edibles, LLC, a plant‑based agricultural and food business created as a tribute to her late daughter, Joy Elaine Jackson, who aspired to become a chef. What began as an agricultural venture developed into a food and beverage business in 2024, drawing inspiration from family traditions of gardening canning and cooking Southern comfort foods.
The company produces fruit‑based syrups made with approximately 78% fruit and designed with lower sugar content, bringing together her interest in agriculture, nutrition, and food. Her work through Elaine’s Edibles represents both entrepreneurship and a lasting family legacy. Her business honors her daughter’s memory while transforming cherished recipes and traditions into products intended to be shared with others.
As a woman‑owned and minority‑owned business with SAM.gov registration, she continues to build on her decades of professional experience, combining her background in pediatric medicine with her passion for agriculture, nutrition, family, and entrepreneurship. As she approaches retirement at the end of 2026, Dr. Jackson plans to continue her work in health and nutrition by sharing her personal journey with Type II Diabetes and Hypertension, encouraging others to explore flavorful, wholesome ways of eating. The Syrup Collection represents the beginning of her pantry‑stable product line — clean‑label, fruit‑forward ingredients she uses in her own cooking to create delicious sweet and savory dishes. Since her diagnosis in 2016, Dr. Jackson has focused on developing foods that support her personal wellness goals, and Elaine’s Edibles reflects that commitment to creating products rooted in plant-based agriculture, tradition, and purpose.

01What do you attribute your success to?
I attribute my success to my Christian faith and the challenges I have overcome, including being raised in foster care. My faith has carried me through difficult seasons, continually strengthening and shaping me. I have learned to see “no” as fuel, refusing to let others define my identity or limit my potential.
02What’s the best career advice you’ve ever received?
The best career advice I have received is to get an education. What you learn and achieve through education is something no one can ever take away from you.
03What advice would you give to young women entering your industry?
My advice to young women entering the industry is to never let anyone tell you that you cannot succeed. If an opportunity is meant for you, pursue it with confidence, trust your abilities, and have faith that God will guide you through the challenges along the way.
04What are the biggest challenges or opportunities in your field right now?
The biggest issue on the pediatric side is the rising incidences of obesity related to poor diets. The challenge is getting people to think differently about what they consume, as many believe healthy foods taste bad or boring. Plants are your power fuel and you can make them taste great for better health.
05What values are most important to you in your work and personal life?
My Christian values and faith are the foundation of both my work and personal life. Christ remains at the center, especially through difficult seasons, and putting Him first gives me the strength, guidance, and confidence to move forward.
