Jennifer’s journey into health coaching was shaped by her own experience overcoming a debilitating autoimmune illness that once left her bedridden. Through nutrition, mindset work, and intentional lifestyle changes, she reclaimed her health and discovered a passion for helping others do the same. This transformative experience inspired her to pursue advanced training in health and life coaching and dedicate her career to empowering others to overcome obstacles, build resilience, and create healthier, more fulfilling lives.
Today, Jennifer is the founder of The Gluten-Free Life Consulting, where she provides coaching, education, and consulting services. Where she has developed an innovative gluten-free restaurant consulting program designed to help food service establishments create safer, more inclusive dining experiences for individuals with celiac disease, gluten sensitivity, and autoimmune conditions.
As an educator, advocate, and wellness leader, Jennifer is committed to bridging the gap between health, hospitality, and community. Her mission is to provide practical solutions, trusted guidance, and hope for individuals and organizations striving to improve health outcomes and quality of life.

01What do you attribute your success to?
I would have to say faith over fear. The fear will debilitate us, right? The fear will keep us down, the fear will keep us from being able to do things. But if you have the faith, and you know, I've really had to learn how to give it all to God and trust Him, which is really hard. I had some church trauma when I was younger, but really having that faith and just praying and knowing that everything's gonna be okay has been everything. My kids were my hope when I had none. There was no other choice. I had to live, I had to struggle, I had to get through this struggle, I had to get better so I could raise my kids. And now, being able to help people, especially taking my consulting business into more of a commercial side where I'm going to be able to help masses of people who can go to restaurants and know that they can eat there safely without getting sick, that hope and helping is what lights my fire and keeps my fire burning.
02What advice would you give to young women entering your industry?
My advice to young women entering this industry is to learn how to "Embrace the Pain of the Process". The process of building a career, a business, or a meaningful life will challenge you. There will be moments when you want to quit, when you question yourself, and when returning to your comfort zone feels easier than moving forward.
What I've learned is that the goal itself is only a small part of the journey. The real transformation happens in the process—in the lessons you learn, the resilience you build, and the person you become along the way. Growth is rarely comfortable. In fact, discomfort is often a sign that you're stretching beyond your current limits and stepping into new possibilities.
This is especially important for women, who often face additional obstacles, limited support systems, or industries that remain largely male-dominated. There will be times when you feel scared, uncertain or alone, but don't mistake those feelings for failure. They are often evidence that you're growing.
If you can learn to appreciate the challenges, trust yourself through the difficult moments, and stay committed to your vision, there is very little you cannot accomplish. The process may be hard, but it is also where your strength, confidence, and success are built.
03What are the biggest challenges or opportunities in your field right now?
One of the biggest challenges in the gluten-free and wellness space right now is the gap between consumer demand and industry education. More people than ever are seeking gluten-free options due to celiac disease, non-celiac gluten sensitivity, autoimmune conditions, and health concerns, yet many restaurants and food service establishments still lack the training and systems needed to safely serve these guests.
For individuals with celiac disease, gluten-free is not a preference—it's a medical necessity. Unfortunately, cross-contact, inconsistent food handling practices, and misinformation continue to create barriers and health risks for millions of people. There is also a lack of understanding about the emotional and social impact that dining restrictions can have on individuals and families.
At the same time, I see tremendous opportunity. The hospitality industry has an opportunity to become more inclusive, build customer trust, and better serve a growing population of gluten-free consumers. Restaurants that invest in proper training, kitchen protocols, and staff education can create safer dining experiences while also strengthening customer loyalty and expanding their market reach.
My mission through The Gluten-Free Life Consulting is to help bridge that gap. By providing practical education, staff training, and gluten-free consulting solutions, I help businesses confidently serve the gluten-free community while empowering individuals to live healthier, more connected lives. I believe the future of wellness and hospitality lies in creating environments where people don't have to choose between their health and fully participating in life's experiences.
