About Nicole
Nicole is a wellness entrepreneur, nutrition coach, author, and corporate wellness presenter dedicated to helping busy professionals build healthier lifestyles through practical, sustainable nutrition. After spending nearly a decade in New York City's corporate real estate industry, she recognized the challenges professionals face when balancing demanding careers with their health and made it her mission to simplify healthy living. She founded **Nibbles by Nic**, where she provides corporate wellness programs, team-building workshops, and private coaching designed to make meal planning and nutrition approachable. She is also the author of the cookbook *Cups, Sticks & Nibbles* and creator of the signature Weekly Dinner Menu Board, a system that helps families and professionals make healthy eating more manageable.
Committed to lifelong learning, Meyer is currently completing a Master of Science in Nutrition & Dietetics at Long Island University while finishing supervised clinical rotations on her path to becoming a Registered Dietitian Nutritionist (RDN). Her hands-on experience includes clinical nutrition at Huntington Hospital, pediatric eating disorder care at Cohen Children's Medical Center, and sports nutrition with Long Island University athletics. These experiences have strengthened her evidence-based approach to nutrition, allowing her to combine real-world coaching with clinical knowledge to help individuals and organizations improve health, productivity, and overall well-being.
Throughout her career, Meyer has collaborated with organizations including Whole Foods, GOYA, and Banza, and has presented wellness programs for companies such as UBS, Cushman & Wakefield, Kenneth Cole, and Empire State Realty Trust. She has also been featured on ABC7, PIX11, Dr. Oz, Rachael Ray, and News12 Long Island, sharing practical nutrition strategies with a broader audience. Whether speaking to corporate teams, coaching clients, or mentoring future nutrition professionals, Meyer is passionate about empowering others with realistic, sustainable habits that create lasting lifestyle change.

01What do you attribute your success to?
Being relatable, knowing how to connect and speak with people, raised as a competitive tennis player that gave her the drive, discipline, hunger and competitive spirit, sets goals and has to achieve them her motivation and perseverance has helped her to achieve her goals
02What’s the best career advice you’ve ever received?
You do you (be your true authentic self), show your authenticity and do the best you can in the areas you excel. Its never too late to reach your dreams
03What advice would you give to young women entering your industry?
Important to keep going, dive in as there will never be perfect timing. Take day by day and look at the journey. Learn from everyone you come across as they can help shape who you are
04What are the biggest challenges or opportunities in your field right now?
Studying (carving out the time) and learning computer skills
05What values are most important to you in your work and personal life?
Being true to self (relatability) she has always done her best when relatable. Put your self in someone else's shoes. figuring out a plan and know you don't have to be perfect
