Her Story

About Whitney

Whitney Lounsbury is the Founder and CEO of Butter Baked Cake Co., a California-based better-for-you dessert company specializing in sugar-free, gluten-free, grain-free, and keto-friendly baked goods. Based in Oceanside, California, she is known for creating indulgent desserts designed to be inclusive for individuals and families managing dietary restrictions. Her work centers on reimagining traditional baked treats using nutrient-dense ingredients while maintaining flavor, celebration, and accessibility at the heart of the experience.

Her journey into food entrepreneurship began with a deeply personal need. When her son required a strict dietary overhaul due to health challenges, Whitney struggled to find desserts that met his needs without making him feel excluded from everyday celebrations. Drawing on her background in sales leadership within the fashion industry, where she managed major accounts for brands such as Puma and DKNY, she began experimenting in her kitchen to develop recipes that were both compliant and enjoyable. What started as a home-based solution quickly gained traction as friends, family, and early customers responded enthusiastically to her creations.

Founded in 2018, Butter Baked Cake Co. grew from small local sales into a nationally recognized brand with distribution across grocery stores, military bases, food service channels, and direct-to-consumer sales. Whitney has remained bootstrapped for nearly nine years, maintaining profitability while scaling operations through partnerships with certified co-packers and expanding retail reach. Today, she continues to lead product innovation and brand growth, while preparing for the company’s next phase of expansion, including new product launches and potential fundraising to support broader distribution. Her work reflects a mission-driven commitment to inclusion, innovation, and making dessert accessible to everyone.

Ten minutes with Whitney

01What do you attribute your success to?

I attribute my success to the meaningful impact our customers share with us, reflected in over 5,500 five-star reviews and ongoing messages about how the product has improved their lives. Those experiences are deeply motivating and remind me why I do this work, which I view as a privilege rather than an obligation. Even when challenges arise, hearing how the product has made a difference—similar to its impact on my own family—keeps me grounded and inspired. I’m also grateful for the collaborative culture in the better-for-you food industry, where founders and brands genuinely support one another, making it a uniquely encouraging and purpose-driven space to build in.

02What’s the best career advice you’ve ever received?

The best career advice I’ve received has come from fellow entrepreneurs, industry leaders, and members of the better-for-you food community who have guided and encouraged me throughout my journey. Their support has reinforced the importance of staying connected, being open to collaboration, and leaning on a network of people who understand the challenges of building in this s

03What advice would you give to young women entering your industry?

My advice to young women entering this industry is to understand your own personality and build in a way that works with it, not against it. I started out very risk-averse, so I took a gradual approach—testing ideas, doing events, and making the product myself—rather than taking a big leap all at once, which helped me build confidence over time. At the same time, I learned that growth requires becoming more comfortable with risk and not waiting until everything feels perfect before moving forward. I also encourage starting small to validate your ideas and, if you lack experience, gaining exposure by working within an established company first so you can learn the industry and make mistakes before investing your own time and money.

04What are the biggest challenges or opportunities in your field right now?

The biggest challenges in the food industry right now include rising costs, scaling operational demands, and keeping pace with rapidly evolving consumer expectations. At the same time, these pressures are driving meaningful innovation, creating strong opportunities in health-focused products, specialized nutrition, and new solutions designed to better meet unmet consumer needs.

05What values are most important to you in your work and personal life?

In both my work and personal life, I value integrity, innovation, resilience, health, customer care, and community. I believe businesses should stay grounded in their mission while consistently striving to create meaningful, positive impact for the people they serve.

Outside of work, I’m passionate about health-conscious food innovation and entrepreneurship, especially work that helps families navigate dietary challenges and improve their quality of life. I’m also deeply committed to my family and to advocating for healthier food options that can make a real difference in everyday living.
